Ingredients

  • 0.5 Navel orange
  • 0.5 tbsp Miso
  • 1 tsp Unsweetened peanut butter
  • 1 tbsp Sesame oil or chili oil
  • 1 tbsp Light soy sauce
  • 1 tbsp Rice wine vinegar or mirin
  • 150 g Extra firm tofu (+ 2 tsp soy sauce)
  • Olive oil for airfrying
  • 0.5 cup Purple cabbage
  • 0.3 cup Edamame
  • 0.25 cup Red bell pepper
  • 1 serving Noodles
  • Sesame seeds
  • Cilantro

Directions

  1. Chop vegetables - slice purple cabbage, red bell peppers thinly. Steam edamame for 2-3 minutes if you’re using frozen.
  2. Cube extra firm tofu and drizzle some olive oil. Air fry for 10 minutes. Add a splash of soy sauce at the halfway mark and give the tofu a good toss. Continue airfrying.
  3. Boil the noodles of your choice according to package instructions. Drain and keep the noodle water.
  4. Squeeze orange into the meal prep jar. ½ an orange would give about 3 tablespoons of fresh orange juice.
  5. Add miso, light soy sauce, mirin, sesame oil and unsweetened peanut butter. Add ⅓ cup noodle water and give it a good whisk.
  6. Add in air fried tofu, purple cabbage, red bell peppers, edamame and cooked noodles.
  7. Serve them cold, like a noodle salad or add 1 cup of hot water to have orange miso ramen.
