Ingredients

  • 4 flax eggs
  • 0.75 cup extra virgin olive oil
  • 1 cup granulated sugar
  • 1 whole Sunkist® Navel orange
  • 1 tsp lemon juice
  • 2 cups all purpose flour
  • 0.25 cup soy milk
  • olive oil spray
  • pinch salt
  • icing sugar
  • sliced oranges

Directions

  1. Make flax eggs by combining 4 tbsp flax meal with 12 tbsp water =½ cup.
  2. Preheat the oven to 350°F (175°C). Cut Sunkist® Navel Oranges into quarters. Sift your all-purpose flour.
  3. Combine all ingredients required for the cake and blend on high for 30 to 45 seconds max. Over blending can cause the cake to become dense.
  4. Grease a cake pan with olive oil or avocado oil spray. Pour the batter into the pan and bake for 35 to 45 minutes, or until a toothpick inserted into the center comes out clean.
  5. Let the cake cool in the pan for 10 minutes, then turn out onto a wire rack to cool completely.
  6. Sift icing sugar on top and place sliced oranges. Slice and enjoy!
