Fresh Green Salads

Salad Ingredients

  • 4 cups loosely packed mixed greens lettuce
  • 1 cup or 2-3 endives, sliced
  • 1 cup or 1/2 small radicchio, sliced
  • 2 Sunkist® Navel Orange, segmented
  • 1 stalk fennel, thinly sliced
  • 1 avocado, cubed
  • .25 cup finely grated sharp white cheddar cheese

Dressing Ingredients

  • .25 cup fresh Sunkist® lemon juice
  • 0.25 cup fresh Sunkist® Navel Orange juice
  • 1 tbsp. dijon mustard
  • 2 tbsp. honey
  • 0.33 cup extra virgin olive oil
  • Salt and pepper to taste

Preparation: 30 minutes

Salad

Directions

  1. Assemble salad by adding greens, endives, radicchio, fennel and avocado onto a platter.
  2. Segment Sunkist Navel orange and Sunkist mandarin and add to platter.
  3. Serve dressing with salad or toss and serve immediately. Garnish with cheese.

  1. Pour Sunkist lemon juice, Sunkist Navel orange juice, mustard, honey and olive oil into a mason jar and shake. Season with salt and pepper to taste.
