Mandarin Orange Ramen Noodle Salad

An easy-to-follow recipe for a quick ramen fix!

Ingredients

  • 2 cups Sunkist® mandarins
  • 0.5 package (14 oz) shredded coleslaw mixture with carrots (about 6 cups)
  • 0.5 package (3 oz) “Oriental” flavor instant ramen noodles, seasoning packet reserved
  • 1 green onions, thinly sliced
  • 0.25 cup sliced almonds, toasted
  • 1 tbsp. sesame seeds, toasted
  • 0.1 cup white wine vinegar
  • 0.5 tbsp. sesame oil
  • 1.5 tbsp. canola oil
  • 0.1 cup sugar
  • 0.25 tsp. salt

PREP TIME

Preparation: 10 minutes

Marination: 60 minutes

Directions

  1. Peel and segment the mandarin oranges and place in a large bowl with the slaw mix.
  2. Remove the dry ramen noodles from the package and set the seasoning packet aside.
  3. Break up the noodles and add to the slaw, along with the green onions, almonds and sesame seeds.
  4. In a small bowl, whisk together the reserved seasoning packet, vinegar, oils, sugar, salt and spice until sugar is dissolved.
  5. Pour dressing over the slaw mixture and toss together. Refrigerate for at least 1 hour to hydrate noodles.

    Notes:
    • Be sure to allow at least one hour for salad noodles to marinate in the dressing before serving.
