Super Citrus Protein Power Balls

No-bake protein balls are the easiest snacks to make for satisfying a sweet tooth, while packing a nutritious punch.

Ingredients

  • 1 cup pitted prunes (approx. 24)
  • 6 tbsp. freshly squeezed Sunkist® orange juice
  • 1 cup gluten free rolled oats
  • 2 tbsp. coconut oil, melted
  • 0.25 cup plant-based vanilla protein powder
  • 4 tsp. Sunkist® lemon zest
  • 2 tbsp. chia seeds
  • 0.5 cup raw cashews
  • 2 tsp. Sunkist® orange zest
  • 0.25 cup raw shelled hemp seeds, for rolling

Preparation: 20 minutes

Directions

  1. Tear the prunes and put in a small bowl; toss with the orange juice and press the prunes into the liquid with a fork. Let soak for 10 minutes.
  2. Place the prune mixture and liquid, oats, coconut oil, protein powder, lemon zest and chia in a food processor and process until mixture just comes together.
  3. Add the cashews and pulse until the nuts are broken down and chopped into the mixture.
  4. Portion the mixture into heaping tablespoons and roll into balls, then roll in hemp seeds to coat.
  5. Store refrigerated for up to 2 weeks. Bring to room temperature before enjoying.
