Sunkist® Meyer Lemon Tofu and Chicken Soup

Get your protein fix with tofu and chicken simmered in a bright, lemony broth.

Ingredients

  • 3 3 green onions, tops only
  • 5 slices ginger
  • 8 ounces chicken breasts
  • Salt
  • 4 cups water
  • 1 1 package firm tofu, diced into 1/4" chunks
  • 1 tbsp. chicken soup powder
  • 2 tbsp. Sunkist® Meyer Lemon Juice, freshly-squeezed
  • 1 tbsp. Sunkist® Meyer Lemon zest*
  • White pepper to taste
  • Meyer Lemon slices, green onions, and fresh coriander garnish

PREPARATION: 10 minutes

COOKING: 20 minutes

Directions

  1. Heat a medium sized sauce pan over medium-high heat.
  2. Add the green onions and ginger to the pan, stir until fragrant but no color.
  3. Season the chicken breasts with salt, and add to the pan.
  4. Add the water and stir to combine.
  5. Poach the chicken until cooked, about 3-4 minutes, skimming the surface of the broth as the chicken cooks.
  6. Remove the chicken breasts from the liquid; allow to rest at room temperature. Once cool enough to handle, shred the chicken meat with your hands, or two forks.
  7. Remove the green onion from the broth. Add in tofu, shredded chicken, chicken soup powder, and Meyer Lemon juice & zest. Season soup with salt and white pepper to taste.
  8. When ready to serve, divide soup into four bowls; garnish with the Meyer Lemon slices, green onions, and fresh coriander.

    Notes:
    • *Utilize the whole fruit by removing the zest from the orange prior to juicing.
